I love to make myself a bowl of fruit after supper to satisfy my sweet tooth and I recently found if I top it with antioxidant-rich cacao nibs and a few nuts I can also satisfy my craving for chocolate, as the fats in the pecans keep me nicely full and the intense flavour of the cacao is so delicious, whilst also being extremely healthy and virtuous.

Obviously some evenings call for real chocolate and others, chocolate cake but for the evenings in between here is one of my go-to desserts or apr├Ęs-dinner snacks.

It’s also delicious with a little dollop of coconut yoghurt too if you like.

So yummy!

Papaya dessert bowl

(Serves 1)

Ingredients:

1/4 ripe papaya, sliced and deseeded

A handful of blueberries

A small handful of toasted chopped pecans (or other nut such as walnut, hazelnuts or almonds)

1 tbsp. Raw organic cacao nibs

2 tsp bee pollen

Squeeze of lime juice

1 – 2 tbsp. Coconut yoghurt (optional)

Method:

Place the slice of papaya in a bowl and squeeze a little lime juice over the top of the fruit.

Sprinkle with the toasted pecan nuts, raw cacao nibs and bee pollen and dive in.

So simple and yummy!
